We had the option to UV map in Maya or in the Headus UV program. I chose to try out mapping in Maya and it worked out, but I had to redo the mapping for the face several times because I made some accidental cuts that made the map go crazy, or it just went a bit crazy of its own accord. Here's the unfolded maps of everything but the head so far:
Here is the map with the head unfolded as one large mesh but I think it looks a bit confusing and difficult to deal with. Also the second half of the torso kept going crazy when I unfolded it, so I had to cut it differently to the other half:
Here's the final UV map that I decided to work with in Photoshop to create a colourful texture for the cat. It worked out well, even though there are quite a few small pieces to deal with and the head was difficult to cut and unfold:
